A great new feature this year at Rock Shadows has been Food Truck Thursdays. We have enjoyed a few of these delightful meals and this was another one.
Mexican Pizza
Crispy tortilla, topped with refried beans, guacamole, cheese, tomatoes, green chiles and your choice of grilled meat or grilled veggies.
This photo is the beef version but we ordered chicken tonight
The bottom crispy tortilla is spread with the refried beans,
topped with the second tortilla and the rest of the goodies!
